This pure soy sauces, made with severely selected ingredients such as whole soybeans, wheat, and sun-dried salt, is fermented in a big barrel made of Japanese cedar for two years. “Marudaizu soy sauce” is traditionally brewed using whole soybeans, while most soy sauce is brewed with chopped soybeans. Using whole beans means the brewing and fermenting process takes longer.
